Grilled Beef Sirloin and Farmer`s Market Skewers

Ingredients:
1/2 eaSmall red onion, cut into 1/2 inch thick wedges2 eaMetal skewers,
12 inches long1/2 eaMedium zucchini, cut into 1/2 inch slices1/2
eaMedium yellow squash, cut into 1/2 inch slices1/4 tspDried thyme
leaves, crushed1 TbsDijon mustard10 ozBoneless beef top sirloin steak,
cut 1 inch thick1 TbsPreserves, apricot1/8 tspSpice, pepper, black1/2
tspJuice, lemon, fresh4 eaMushrooms, med, fresh FDA1 1/2 tspOil, olive,
extra virgin

Directions:
1. Combine first listed amount of mustard, apricot preserves, lemon
juice, dried thyme and pepper in 1-cup glass measure. Microwave glaze on
HIGH 45 seconds, stirring once. Brush on beef steak. 
2. Alternately thread vegetables onto metal skewers. Combine remaining
mustard and olive oil; brush on vegetables. 
3. Place steak and vegetable skewers on grid over medium, ash-covered
coals. Grill steak, uncovered, 17 to 21 minutes for medium rare to
medium doneness, turning occasionally. Grill vegetables 6 to 10 minutes
or until tender, turning occasionally. 
4. Carve steak; season with salt. Serve with vegetables.
