Butterscotch Banana Bread
 
When plain banana bread doesn*t seem exciting enough, this variation is
just the ticket.

Total Time: 70 minutes
1 3/4 cups all-purpose flour 
2 teaspoons baking powder 
1/2 teaspoon baking soda 
1/2 teaspoon ground cinnamon 
1/2 teaspoon ground nutmeg 
1 cup mashed bananas (2 large bananas) 
3/4 cup sugar 
1 large egg 
2 large egg whites 
1/4 cup canola oil 
1/4 cup skim milk 
1/2 cup butterscotch chips
 
1. Preheat the oven to 350 degrees F. 
2. Coat a 9X5X3-inch loaf pan with onstick cooking spray. Combine the
flour, baking powder, baking soda, cinnamon, and nutmeg in a bowl; set
aside. 
3. In a mixing bowl, combine the mashed bananas, sugar, egg, egg whites,
and oil, blending well. Add the flour mixture alternately with the milk
to the banana mixture. Stir in the burtterscotch chips. 
4. Pour into the prepared loaf pan. Bake for 50 minutes to 1 hour or
until a toothpick inserted in the center comes out clean. Cool in pan.
