Macaroni and Cheese with Beef
1 tbsp salad oil
1 medium onion, chopped
1 medium green pepper, chopped
1 lb. lean ground beef
2 15-oz. cans tomato sauce
3/4 16-oz. pkg. postachioli or ziti macaroni
1 8-oz. pkg. shredded cheddar cheese (2 cups)
About 45 min. before serving:
In 12-inch skillet over medium heat, in hot salad oil, cook onion and
green pepper until tender. Stir in ground beef. Over medium-high heat,
cook until pan juices evaporate and meat is brown. Spoon off fat if
any. Stir in tomato sauce and 3/4 cup water. Heat to boiling. Reduce
heat to medium-low. Cover and simmer 25 min. to blend flavors.
Meanwhile, prepare macaroni as label directs. Drain.
Stir macaroni and cheese into beef mixture until cheese melts. Makes
6 servings--590 calories each.
