Sweet and Sour Beef

2 cups beef, cubed and cooked
1/2 green pepper, cut in thin strips
1/2 onion, cut in thin strips
3 tablespoons hot oil
Pineapple juice, drained for 20-ounce can of pineapple chunks
2/3 cup brown sugar, firmly packed
2/3 cup water
1/3 cup ketchup
1/4 cup vinegar
2 tablespoons cornstarch
20-ounce can pineapple chunks

Sauté beef, pepper, and onion in hot oil in skillet. In saucepan 
combine pineapple juice and next 5 ingredients. Bring to a boil, 
stirring frequently until thickened. Pour over beef mixture and stir 
in pineapple chunks. Simmer 10 to 15 minutes. Serve over hot rice. 
Make 4 servings.
