ORANGE COCONUT CAKE
125 gr margarine or butter
1 egg
1 cup sugar
1 cup self rising flour
1 cup coconut
2 oranges
Cream together the margarine and sugar, beat in egg, Add flour, coconut,
grated rind and juice of both oranges. Mix well. Mixture should be
dropping consistency; add a little extra juice (or use milk) if
required. Place into a greased and base-lined 20 cm (8 inch) tin and
bake in a moderate oven approximately 60 minutes or till tests cooked
with a skewer
