BREAKFAST SUPPER

We often enjoy what we call a "breakfast supper.  We can always count
on bacon, eggs, pancakes or waffles to make just about everyone happy.
And since we don't often make a big breakfast in the morning, an easy
supper is a good excuse to cook up a few family favorites. Try Bacon
and Egg Sandwiches, Strawberry Cheesecake French Toast, Sun-dried
Tomato Sausage Casserole, Spinach Frittata, and Eggs Monterey, a rich
blend of eggs, artichokes, pesto and cheese that created a tasty
combination with a light green hue. .


Bacon & Egg Sandwiches
Serves 2; prepare in 20 minutes

5 bacon slices, halved crosswise
4-inch-square piece ciabatta or focaccia bread, halved horizontally
3 tablespoons olive oil, divided
4 large thin tomato slices
1 small shallot, chopped
1/2 tablespoon white wine vinegar
1 cup baby greens, packed
2 large eggs
Parmesan cheese shavings

1. Cook bacon until brown and crisp; transfer to paper towels to drain.

2. Wipe out skillet. Brush cut sides of bread with 1 tablespoon oil.
Place bread, cut sides down, in skillet. Cook over medium heat until
golden, about 3 minutes. Place 1 bread square, golden side up, on each
of two plates. Top each with half of bacon, then 2 tomato slices.

3. Whisk 1 tablespoon oil, shallot and vinegar in medium bowl. Season
dressing with salt and pepper. Add greens and toss to coat.

4. Heat remaining 1 tablespoon oil in same skillet over medium heat.
Crack eggs into skillet. Sprinkle with salt and pepper. Cook until
whites are set and yolks are cooked as desired. Top each sandwich with
egg, then greens and cheese.
