Squash Fritters 

1 Squash - grated 
1 large egg 
Salt, Pepper to taste 
1-2 cups of flour (use to thicken to hushpuppy
consistency) 
1 quart vegetable oil (or canola, whatever you prefer)

Combine all ingredients except vegetable oil in a
medium bowl. Heat vegetable oil in a deep fryer or 2
quart pot on medium high to high heat.

Drop spoon-fulls of the batter into the oil, cook for
about a minute or so, until desired brownness, turn
them over and brown the other side. Drain in a paper
towel while cooking more.
