PORK CHOPS WITH PEACH SALSA (from About Busy Cooks)

 

Nectarines, apricots or mangoes could be substituted for the

peaches in this wonderful entree recipe

 

Ingredients::

 

6 (3/4" thick) ork chops

2 peaches, peeled and chopped

1/8 tsp white pepper

1/2 cup chopped green onions

1 tbsp lemon juice

1/4 tsp crushed red pepper flakes

1/4 tsp salt

1/4 cup finely chopped red bell pepper

1 tbsp chopped cilantro

 

Directions:

 

In medium bowl stir together all ingredients except pork chops.

Cover and chill for at least 1 hour. Prepare grill and heat

coals until ash white. Meanwhile, sprinkle pork chops with more

salt and pepper. Cook over medium coals, covered, until pork is

no longer pink in center (10 - 15 minutes), Serve with peach

salsa. 6 servings.
