Pumpkin Pancakes

 

Ingredients:

1/2 cup each, flour and yellow cornmeal

2 teaspoons baking powder

2 teaspoons ground cinnamon

1/4 teaspoon each of baking soda and salt

1 cup buttermilk or sourmilk (add a little vinegar)

1/2 cup canned pumpkin (not pie filling)

3 tablespoons brown sugar

1 large egg

1 tablespoon oil

 

In a bowl, combine flour, cornmeal, baking powder,

cinnamon, baking soda and salt. Mix well. In another

bowl mix together the buttermilk, pumpkin, brown sugar,

egg and oil. Add flour mixture and stir til just moistened.

Drop the batter by 1/4 cup onto a hot griddle until it starts

to bubble on the top of the pancake, then flip to the other

side until browned.
