BUTTER CRISP COOKIES

1 c. butter, softened
1 c. granulated sugar
1 c. brown sugar, packed
1 tsp. vanilla
1 egg
1/2 tsp. salt
1 tsp. soda
2 c. all purpose flour
1 c. mashed potato (flakes)
1 c. flaked coconut

Preheat oven to 375 degrees. Cream first 5 ingredients with mixer until 
blended. Add dry ingredients. Work with hand or big spoon. Cannot use mixer. 
Shape
in 1 inch balls on ungreased cookie sheet. Flatten down with small glass dipped 
in white sugar. Bake 5-6 minutes or until golden brown. Cool. Store in
tightly covered container. Makes 5 dozen.  Enjoy.
