Two BIG OATMEAL COOKIES 

 

1 1/2   oz           Oatmeal -- dry

1/3   c            Nonfat dry milk

1       t            Baking powder

1       t            Cinnamon

2       tb           Raisins

2       tb           Peanut butter -- (chunky)

1       t            Vanilla

1/2                Banana -- (mashed)(adds sweet)

2       tb           Water -- (maybe 3 T)

 

Combine all. Divide into 2 cookies on a sprayed baking sheet. Bake at

350 F. for 5-8 min. Do not over-bake. This makes 2 soft cookies.  

1 1/4 c  Butter or margarine

1 pn Salt

1 1/2 c  Sugar

Put in well and mix together

1 ts Soda

1/2 ts Vanilla extract

1/2 ts Almond extract

1/2 ts Lemon extract

2 lg Eggs

1/2 c  Buttermilk or milk

 

Mix dry ingredients with butter until crumbly.  Make a well in the center

and add remaining ingredients. Chill in refrigerator for at least 3 hours

or overnight.    Roll out to 1/4? thick and cut with favorite cookie

cutter.  Bake at 325 degrees for 10 - 12 minutes on a greased cookie

sheet.

If a colored cookie is desired, add food color to wet ingredients. Cool

and frost as desired.
