COFFEE CAKE

2 1/2 - 3 c. flour
1 pkg. yeast
1/2 c. milk or 1/4 c. water and 1/4 c. milk
1/3 c. sugar
1/3 c. butter
1 egg
1/2 tsp. vanilla
1/4 tsp. salt

Dissolve yeast in 1/4 cup warm water. Measure 1 cup flour in bowl. Add sugar 
and salt. Heat milk and add butter - heat until butter is just melted. Cool
to lukewarm and add to flour/sugar mixture. Beat with mixer for two minutes. 
Add yeast mixture. Beat. Add egg and vanilla and beat 2 minutes. Add enough
flour for soft dough.

Knead for 5 minutes. Put in buttered bowl. Let rise until doubled. Punch down. 
Let set for 10 minutes and then put in two 8 inch pans. Pat dough up the
sides.

FILLING:

Partly cook sweetened apples or peaches - drain well. Put n partially raised 
coffee cake dough.

Make custard of:

1 egg
1/3 c. sugar
1 tsp. vanilla
1 c. cream or half and half
1 1/2 tbsp. cornstarch

Cook above ingredients. Put on fruit before baking. Sprinkle with sugar and 
cinnamon when done.  Enjoy.
