MINI FRUIT CAKES

 

3 eggs, well beaten

1 can (14 oz.) Eagle Brand sweetened condensed milk

1 jar (28 oz.) Borden non-such mincemeat

1 c. chopped nuts

2 c. corn flake crumbs

1/2 c. all-purpose flour

1 tsp. baking soda

36 candied cherries

 

In large bowl combine all ingredients except cherries. Line 1 3/4 inch cupcake 
pans with paper liners. Spoon a tablespoon of batter into each liner. Top

each with a cherry half. Bake at 300 degrees for 20-25 minutes. Cool. 
Refrigerate or freeze in airtight container. Makes 10 dozen holiday or party 
sweets.  Enjoy.
