Veal Birds
2 pounds veal round steak cut 1/2 inch thick.
1 1/2 cups finely diced bread crumbs
2 tablespoons butter or cooking oil
3 tablespoons finely chopped onions
1 teaspoon sage 1/2 teaspoon salt 1 Tablespoon water
Cut meat into 6 pieces, pound meat until double in size. Sprinkle meat
with salt and pepper. For stuffing, with bread crumbs, add rest of the
ingredients toss them together in separate bowl until blended. place
this mixture in the middle of the six pieces of meat equally, then roll
up like a jelly roll, tie loosely with string or with tooth pick to hold
in the stuffing Sprinkle once again with salt and pepper. Roll them in
flour. Brown the birds on both sides in 1/3rd cup butter. After they are
nice and brown, add 1/2 or 3/4 cup water depending on the size skillet
you use, simmer covered for 30 min. or until tender. Then serve.
