Veggie Pizza with Rice Crust

~Crust~
1-1/2 cup long-grain white rice
2 eggs 
1 cup (4 oz) shredded sharp cheddar cheese 
2-3/4 cup water 
= 
In a 2 to 2-1/2 qt saucepan, combine rice & water. 
Bring to a boil over Hi heat; cook until most of 
water is absorbed (7-10 min.). Reduce heat to Lo,
cover; simmer until rice is tender (10-15 min longer). 
Pour rice into a lg bowl. Cool about 5 min, stirring 
occasionally with a fork.  In a sm bowl, beat eggs 
to blend. Add eggs & cheddar cheese to rice; mix 
well. Grease a 9" x 13" pan with non-stick spray. 
Place rice mix in pan; pat into an even layer. 
Bake at 400°F until rice begins to brown around 
edge (15-20 min.) 
~Topping~ 
1 cup thin slivered red or yellow bell pepper 
1 cup thin sliced zucchini 
1 cup thin sliced onion 
1 can (2-1/4 oz) sliced ripe black olives, drained 
3/4 cup prepared pizza sauce 
1-1/2 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 Tbsp olive oil 
= 
Heat olive oil in lg saute pan. Over hi heat. saute 
veggies for 3-5 min. Spread pizza sauce evenly 
over crust. Sprinkle with mozzarella cheese. Spoon 
veggie mix over cheese; top with parmesan 
cheese. 
Bake at 400 ° F for 8-10 min.
