Microwave Mexican Manicotti 
1/4 lb lean ground beef
2 cups refried beans
6 manicotti, uncooked
6 ounces taco sauce
1 cup water
1 cup cheddar cheese, shredded 
Combine (uncooked) ground beef with refried beans. Stuff manicotti
shells with ground beef/bean mixture and place in a medium casserole
dish. 
Combine taco sauce and water.
Pour over filled shells.
Cover with plastic wrap.
Cook on High for 10 minutes.
Turn shells over. 
Cook 17 minutes at 70% power with wrap vented. Remove wrap; sprinkle
with cheese. 
Heat until cheese is melted.
Serve with sour cream and black olives

Microwave Pepper Steak 
Pepper steak is a delicious and classic main dish recipe. This version
cooks in the microwave oven so it's super quick. INGREDIENTS: 
1-1/2 lbs. boneless beef round steak
1/4 cup soy sauce
1 Tbsp. paprika
2 Tbsp. butter
1 green bell pepper, sliced
1 onion, chopped
1 stalk celery, sliced
1 clove garlic, minced
1/4 cup water
2 Tbsp. cornstarch
1 tomato, chopped
PREPARATION: 
Pound beef to 1/4" thickness with mallet and cut into 1/4" thick strips.
Mix with soy sauce and paprika in medium bowl and place in 2 quart
microwave safe dish. Cook on high for 4-5 minutes or until meat is
browned, stirring once during cooking. 
Add green pepper, onion, celery, garlic and 1/4 cup water. Cover dish.
Microwave on medium for 10-14 minutes until meat is tender and
vegetables are crisp-tender, stirring once. Combine cornstarch and 1/4
cup water in small bowl and mix well. Add to meat mixture along with
chopped tomato and stir well. Microwave, uncovered, for 2-4 minutes or
until sauce is thickened, stirring once during cooking. 4 serving

 Microwave Vegetable Chili 
Fresh vegetables, tomatoes and beans are quickly microwaved to produce a
thick, meatless stew. Serve on top of rice and you'll have a
high-protein one-dish meal. 
Microwave Vegetable Chili 
1 onion, chopped
1 cup thinly sliced celery
2 carrots, peeled and thinly sliced
2 cloves garlic, crushed
1 zucchini, sliced
1 green bell pepper, seeded and sliced 
1 (28-ounce) can chopped tomatoes, undrained 1 (15-ounce) can kidney
beans, drained and rinsed 1 tablespoon chili powder 
1 teaspoon ground cumin
1 teaspoon crushed dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon granulated sugar
1 cup shredded mozzarella cheese 
In a large microwave-safe baking dish, combine onion, celery, carrots
and garlic. Microwave, covered, on HIGH for 7 to 8 minutes or until
vegetables are almost tender. 
Add zucchini and green pepper, cook an additional 2 minutes before
adding tomatoes and juice, kidney beans, chili powder, cumin and
oregano. Microwave, covered, on HIGH for 16 to 18 minutes or until
zucchini and green peppers are tender, stirring twice. Let stand,
covered, for 5 minutes. Season with salt, pepper and sugar. Sprinkle
cheese on top before serving. Makes 6 servings

Microwave Vegetable Pie 
This delicious crustless main dish vegetarian pie is cooked entirely in
your microwave oven. 
INGREDIENTS:
2 Tbsp. butter
1 onion, chopped 
16 oz. pkg. frozen broccoli and cauliflower 1 cup dry bread crumbs 
1-1/4 cups shredded Swiss cheese
1 tsp. dried basil leaves
1/4 tsp. salt
1/8 tsp. pepper
1/3 cup sour cream
3 eggs
1/4 cup shredded Parmesan cheese
1 Tbsp. dry bread crumbs
PREPARATION: 
Combine butter and onion in microwave safe 9" pie pan. Cook on high for
3-4 minutes until onions are tender. Add frozen vegetables and cover
with microwave safe plastic wrap. Microwave on high power for 4- 5
minutes until vegetables are thawed, stirring once. 
Vegetables will still be cold. Drain well, if necessary, and set aside. 
In large bowl combine 1 cup bread crumbs, 1 cup cheese, basil,
seasonings, sour cream and eggs. Beat well to combine. Stir in vegetable
mixture and mix well. 
Spread mixture evenly in 9" pie pan. Sprinkle with 1/4 cup Parmesan
cheese and 1 Tbsp. dry bread crumbs. Microwave on high power for 10- 12
minutes or until a knife inserted in center comes out clean, rotating
pan once during cooking. Let stand on solid surface 5 minutes before
serving. 8 serving
