Apple Streusel Coffee Cake
Coffee Cake: Nonstick cooking spray 1 cup all-purpose flour 1 teaspoon baking powder 1/4 teaspoon baking soda 1/8 teaspoon salt 1/4 cup margarine or butter, softened 1/2 cup granulated sugar 1 large egg 1 teaspoon vanilla extract 3 tablespoons nonfat or lowfat plain yogurt 2 cups thinly sliced, unpeeled apples Topping: 1/4 cup all-purpose flour 2 tablespoons brown sugar 1/2 teaspoon cinnamon 2 tablespoons margarine or butter Preheat oven to 350 degrees. Spray 9-inch round or an 8-inch square pan with the cooking spray. In a small bowl, combine 1 cup flour, baking powder, baking soda and salt; mix well. Set aside. In large bowl, combine the margarine and sugar; beat until light and fluffy. Add egg and vanilla; blend well. Alternately add the flour mixture and yogurt to the margarine mixture, beating well after each addition. Spread the batter in pan. Arrange apple slices over batter. In small bowl, combine topping ingredients but margarine. With pastry blender or fork, cut in 2 tablespoons margarine until crumbly. Sprinkle evenly over apples. Bake at 350 F. degrees for 30 to 35 minutes or until toothpick inserted in the center comes out clean. Cool 10 minutes. Serves 8.
