STAN'S FAVORITE COOKIE - LEMON SQUARES 1 c. all-purpose flour 1/2 c. melted butter 1/4 c. confectioners' sugar 2 eggs 1 c. granulated sugar 1/2 tsp. baking powder 1/4 tsp. salt 2 tbsp. lemon juice & 1/4 tsp. rind
Heat oven to 350 degrees. Mix thoroughly flour, butter and sugar. Press in ungreased square pan (8 x 8 x 2 inches) building up a 1/2 inch edge. Bake 20 minutes. Beat remaining ingredients for 3 minutes or until light and fluffy. Pour over the hot crust and bake about 25 minutes longer or until topping is golden brown. Touch lightly in center and no imprint remains, it's done. Cool and cut into squares.
