WELSH CAKES

 

3/4 c. butter

1/2 c. sugar

1 c. currants

1 egg

1/4 c. milk

2 c. flour

1/4 tsp. salt

1 tsp. baking powder

 

Cream butter and sugar. Add currants. Beat together egg and milk and add to 
above mixture. Add dry ingredients (flour, salt, baking powder). Roll on floured

board, to 1/2 inch thickness. Cut in circles and fry on griddle, lightly 
greased. Fry like pancakes until each side is brown.  Enjoy.
