COTTAGE CHEESE PANCAKES

2 eggs
1 cup cottage cheese
1/4 teaspoon salt
2 tablespoons water
1/2 teaspoon vanilla
2 tablespoons sour cream
3/4 cup flour
1/2 teaspoon baking powder

In a medium bowl, combine all ingredients.

Melt a tablespoon or so of butter in a skillet (avoid non-stick). Pour small 
circles of batter into hot skillet; sauté pancakes, flipping once, until both
sides are golden.

Serve with a side of sour cream, applesauce or pineapple chunks in syrup.  
Enjoy.
