FREEZING OVEN ROASTED VEGETABLES Oven roasted vegetables can be frozen with delicious results. Veggies include: Asparagus, beets. turnips, zucchini, garlic, sweet potatoes, winter squash, potatoes, frozen broccoli, brussel sprouts, corn - both fresh and frozen. We can't think of a veggie you can't do this way.
Take the veggies and cut them in to bite size pieces if needed. Then toss them with olive oil and then sprinkle with salt and pepper. Then roast in the oven at 350-400 degrees depending on how much I want to watch them. The higher temperature roasts faster, but can burn more easily it is better for softer veggies. You can split the difference and roast at 375 degrees. Try roasting one type of veggie at a time or place on separate pieces of foil, so they are easy to remove when done as they all finish at different times. I generally turn the veggies when the bottom starts to brown 5-10 minutes depending on temp. and thickness. They are then cooked until they are browned on both sides. If there are left-overs from dinner lay them out on a cookie sheet and flash freeze them, then repackage the veggies once frozen solid. You could also just freeze in serving size containers. The veggies reheat well in a microwave, but are a little softer than when originally cooked. You could also reheat them in the oven or on the stove. You can also take frozen veggies (mixed or single variety) and place them in a container along with some seasonings and a touch of butter and a few drops of water. The container needs to be microwave safe and airtight. Or use the new Microwave steamer bags Glad and Ziploc make. We like the Penzey's Seasoning Blends, but you can use whatever you have and like. The touch of butter or a small drizzle of olive oil, helps the flavor carry and stick to the vegetables. A little lemon juice is always good. We have even added dried fruit/preserves if it complements the main dish. A TYPICAL RECIPE FOR 2-3 PEOPLE 1/2 bag stir fry mix or other veggie blend 1/2 to 1 teaspoon butter Penzeys Mural of flavor blend salt (optional) a splash of water. Place in a bowl and cover with plastic wrap or airtight lid.
