Calypso Parfaits
Yield: 6 servings

Ingredients
2 envelopes unflavored gelatin
1/2 cup orange juice
1 sm banana, sliced
1 sm ripe mango, peeled, diced
1 tsp chopped crystallized ginger
1/4 C sweetened flaked coconut
1 pint orange sherbet
Sprinkle gelatin over orange juice in small saucepan, let stand 2 to 3
minutes to soften. Heat over low heat until dissolved.
Process fruit, ginger, and coconut in food processor, or blender until
smooth, pour in gelatin mixture with motor running. Add sherbet and
process until smooth.
Pour into parfait glasses. Chill until set, 2 to 3 hours.
