Georgia Peach Bread 
This is so good toasted and buttered for breakfast, 
or just a snack.

Makes:  2 loaves 
-
1-1/2 cups sugar
1/2 cup shortening
2 eggs
2-1/4 cups pureed peaches
2 cups all-purpose flour
1 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 tsp vanilla
1 cup finely chopped pecans 
. 
Low Down: Use a sugar substitute, such as SPLENDA, 
your favorite egg substitute & a salt substitute.

Pit & slice enough peaches to make the required 
amount of puree. Creamsugar & shortening together. 
Add eggs; mix thoroughly. Add peach puree &
dry ingredients. Mix thoroughly. Add vanilla & chopped 
pecans; stiruntil blended. Pour into 2 loaf pans approx 
5 x 9 " that have been well greased & floured. Bake at 
325 ° F for 55 min - 1 hr. Let bread cool a
few min before removing from pan.
