CHORIZO, SQUASH & JALAPENO
CORN BREAD STUFFING
Don't worry, the jalapenos only add mild heat because the seeds & veins
are cut away :-) Bake this stuffing separately....

2 cups 1/2-inch cubes peeled butternut squash
1/2 cup water
12 oz chorizo sausage, casing removed
1/2 cup butter
1 large onion, chopped
2 cups chopped green onions
1 cup chopped celery
1/2 cup coarsely chopped seeded deveined jalapeno chilies
1 cup chopped fresh cilantro
1 Tbsp chopped fresh sage

1/3 cup (or more) canned low salt chicken broth
Combine squash and 1/2 cup water in heavy large skillet; bring to boil.
Cover; reduce heat. Cook until squash is almost tender, about 7 min.
Uncover; sprinkle with salt. Boil uncovered until squash is tender and
water has evaporated, about 2 min longer; cool completely.
Saute chorizo in heavy large skillet over medium high heat until cooked
through and fat is rendered, breaking up with back of fork, about 5 min.
Transfer chorizo and drippings to strainer set over bowl. Melt butter in
same skillet over medium high heat. Add onion, green onions, celery and
chilies; saute 8 min. Mix in drained chorizo, cilantro, sage and squash.
