THANKSGIVING FEAST PUMPKIN BARS
4 eggs
2 c. pumpkin
2 c. flour
1 tbsp. soda
1 c. chopped nuts
2 c.sugar
3/4 c. melted butter
2 tbsp. baking powder
1/2 tbsp. cinnamon
 
FROSTING
1 (3 oz.) cream cheese, softened
6 tbsp. butter
1 tbsp. vanilla
1 tbsp. milk
3 c. powdered sugar
 
Mix eggs, sugar, pumpkin and butter together. Sift together dry 
ingredients. Add this to the batter and then stir in the nuts. Pour 
batter into a greased and floured jelly roll pan. Bake for 25 minutes 
at 325 degrees. Cool and frost. Combine ingredients and beat well. 
Spread on bars. Sprinkle with chopped nuts. 
Pecan Pie
 
1 cup sugar
1 cup light corn syrup
 
1/3 cup butter
 
4 eggs, beaten
 
1 teaspoon vanilla
 
1/4 teaspoon salt
 
1 unbaked 9-inch pastry shell (deep dish)
 
1 to 1 1/4 cups pecan halves
Combine sugar, corn syrup, and butter in pan. 
Cook over low heat, stirring constantly, until sugar dissolves and 
butter melts; let cool slightly.
 
Add eggs, vanilla, and salt to mixture, stirring well.
 
Pour filling into pastry shell, and top with pecan halves.
 
Bake at 325 for 50 to 55 minutes
