BUTTERMILK APPLE MUFFINS

1 c. packed brown sugar
1/3 c. vegetable oil
1 lg. egg, beaten
1 tsp. vanilla
1 1/2 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
1 c. peeled, chopped apples
1/2 c. buttermilk
1/4 c. chopped pecans
1/2 tsp. cinnamon

Heat oven to 325 degrees. Line muffin cups with paper liners. Blend 3/4 cup of 
the sugar with the oil, egg and vanilla. Add flour, baking soda and salt
beating only until mixed.

Add apple and stir in buttermilk. Divide evenly among the cups. Combine 
remaining 1/4 cup sugar, pecans and cinnamon. Sprinkle over batter.

Bake in center of oven 30 to 35 minutes.  Enjoy.
