Hollandaise Sauce

1/2 cup butter
3 egg yolks
1tbsp. lemon juice
1/4 tsp. salt
dash cayenne pepper
1/2 c boiling water

Cream butter and add egg yolks one by one.
Beat thoroughly and add salt,pepper,and lemon juice.
Add boiling water about 5 minutes before serving and stir briskly.
Cook in double boiler. stirring until thick.
