CHRISTMAS HAM

Most Swedes serve ham at Christmas. It can be baked, boiled or bought
already pre-cooked. A broiled glaze made from mustard and breadcrumbs makes
the Christmas ham complete. The ham should weigh at least 5 pounds if it's
going to be baked. It's served at the Christmas smorgasbord together with
mustard, applesauce and red cabbage.

1 ham, 5 - 15 lb, lightly salted,
bone-in or boneless

Broiled glaze (for a 7 1/2 lb ham):
1 egg
3 tbs mustard
1 tsp sugar
2 - 3 tbs fine dried breadcrumbs

Quickly rinse the ham in cold water. Wrap in aluminum foil. Insert a meat
thermometer into the thickest part of the ham. Place on a rack in a roasting
pan. Bake in oven until thermometer shows 165F. Allow 25 - 40 minutes per
pound. Remove ham from oven and loosen the rind.

Place ham on a rack in a roasting pan.

Mix together egg, mustard and sugar to make a glaze. Coat the ham with the
glaze. Sprinkle breadcrumbs on top, place in oven set at 400F and broil
until golden brown. Enjoy!
