    1 1/4           cups butter
     2/3           cup sugar
    1           teaspoon vanilla extract
  2               cups all-purpose flour
          1/8     teaspoon salt
          1/2           cup unsweetened
cocoa powder
  2               cups chopped pecans
          1/2           cup confectioners'
sugar
In a medium bowl, cream butter and sugar until light and fluffy. Stir in
the
vanilla.
Sift together the flour, salt and cocoa. Stir into the creamed mixture.
Then stir in the nuts until well blended. Cover and chill for at least 2
hours.
Preheat oven to 350 degrees F.
Roll chilled dough into 1 inch balls. Place on an unprepared cookie
sheet
about 2 inches apart.
Bake for 20 minutes in the preheated oven. Roll in confectioners' sugar
when cooled.

  2       tablespoons powdered sugar
In large bowl, combine sugar and butter. Beat until light and fluffy.
Add
milk, vanilla and egg; blend well.
Add flour, cocoa, baking powder and baking soda. Mix well. Cover with
plastic wrap. Refrigerate 1 hour for easier handling. Heat oven to 350
degrees.
On lightly floured surface, roll out 1/3 of dough at a time to 1/8"
thickness. (Keep remaining dough refrigerated.) Cut with floured 2 1/2"
star-shaped cookie cutter. Using drinking straw,
punch random holes in cutout stars. Place 2" apart on ungreased cookie
sheets.
Bake for 8-11 min. or until set. Immediately remove from cookie sheets.
Cool
15 min. or until completely cooled. Sprinkle with powdered sugar.

    4             ounces sweet baking chocolate --
finely chopped
     1/2           cup finely shredded coconut
     1/2           cup finely chopped pecans --

    12           ounces bittersweet or sweet baking
chocolate --
chopped
    4         teaspoons shortening
    2 1/2           cups finely shredded coconut --
toasted
Preheat oven to 350ยบ.
In a bowl beat butter with an electric mixer on medium to high speed for
30
seconds.
Add brown sugar, baking powder, baking soda and salt. Beat in as much of
the flour as you can with the mixer. Stir in any remaining flour with a
wooden spoon.
Stir in the finely chopped sweet chocolate, the 1/2 cup coconut and the
pecans.
Shape dough into 3/4" balls. Place balls 2" apart on ungreased cookie
sheets.
Bake 10 minutes or until edges are browned. Remove and cool on a wire
rack.
Meanwhile. in a saucepan melt bittersweet chocolate, allowing excess to
drip
off. transfer to a cookie sheet lined with waxed paper. Sprinkle with
toasted coconut.
Chill until firm (about 1 hour).

  1           teaspoon baking powder
          1/4     teaspoon salt
  5       tablespoons butter
  6       tablespoons cocoa powder
  1               cup sugar
  1           teaspoon vanilla
  2                     extra large eggs
    1               cup pecans -- finely
chopped-optional
     1/2           cup powdered sugar -- for rolling
  In a medium bowl, sift flour, baking powder and salt. Set aside.
In a small heavy saucepan, melt butter over low heat, add cocoa powder.
Blend well with a fork or a small whisk until smooth. Remove pan from
heat.
Stir in sugar until combined (it will all be dark brown at this point).
Transfer to a large mixing bowl, add vanilla, then eggs one at a time,
stirring well with a wooden spoon or hand mixer after each addition. Add
flour mixture and nuts if desired. Mix well. Cover the dough with
plastic wrap. Refrigerate until chilled (at least 2
hours). The dough never really gets
stiff, but it won't roll into nice balls if it gets warm. Preheat oven
to 400 degrees.
Grab a handful of dough, enough for a cookie sheet, leaving the rest in
the
fridge.
Roll each hunk of dough into a 3/4-inch ball, then roll in powdered
sugar.
It is easier to roll the dough into balls if you coat your hand with
powdered sugar.
Place the sugar coated balls onto a greased cookie sheet, 2" apart. Bake
cookies for 8 minutes at 400 degrees. Let cool a minute, then remove
from pan.
Store in an airtight container to maintain the soft and chewy texture of
cookies. If you'd like a crisper cookie, cook a minute longer (be
careful
not to burn the bottoms).

    4           squares unsweetened baking chocolate
     1/2           cup vegetable oil
    2               cups sugar
  4                     eggs
  1           teaspoon vanilla
  2               cups flour
  1           teaspoon baking powder
          1/2     teaspoon salt
                        Nuts

Melt unsweetened baking chocolate in bowl. Add vegetable oil and 2 cups
sugar.
Beat in 4 eggs, one at a time. Add vanilla. Sift in flour, baking
powder, salt and nuts, if used. Chill several hours or overnight.
Roll into balls. Dip generously in powdered sugar. Bake at 350 degrees
for 12 minutes. Balls will burst open and should be soft
when cooled.
Work quickly with dough. It softens with handling.
