Kolls Family Christmas Cookies
2 cups flour 1 1/2 teaspoons baking powder 6 tablespoons butter 2/3 cups shortening 3/4 cups sugar 1 egg 1 teaspoon vanilla 4 teaspoons milk 1/4 - 1 teaspoon lemon extract (to taste) For the icing: Powdered sugar Milk Vanilla Almond extract Drop of lemon extract Optional: food coloring For decorating: Sprinkles Colored sugars Edible decorative gels To make the cookie dough: First, mix together all the dry ingredients in a bowl. In another bowl, beat the butter and shortening for 30 seconds. Add the sugar to the butter/shortening mixture and beat until fluffy. Next, add an egg, milk, vanilla and lemon extract and beat again. Now you can mix in the dry ingredients slowly. Cover the dough mixture and chill in fridge for at least three hours or overnight. Once the dough is well chilled, dust a small amount with flour and roll it out between two pieces of wax paper. When the dough is the desired thickness, peel off the top layer of wax paper. Now you can go to town with your cookie cutters! Dip a cookie cutter in flour, and press the cutter into the dough. Place the cut dough onto an ungreased cookie sheet and continue rolling out and cutting the dough. Preheat the oven to 375 degrees. Bake the cookies until just golden, about 6-8 minutes. Let them cool on the sheet, then transfer them to paper towels. Now you're ready to begin icing the cookies! To make the icing: Mix powdered sugar with milk until you achieve the desired consistency. (I prefer mine slightly thinner than pancake batter). Add a few drops of lemon, almond and vanilla extracts and food coloring if desired. Paint the cooled cookies with glaze-I find a pastry brush works well-and then decorate while the glaze is still wet.
