Peach Berry Jubilee

Comments:
This is undoubtedly one of the lightest and most delicious desserts
you'll ever taste. Since fresh peaches are typically more available
during summer, summer is a great time to serve this dessert. However,
frozen peaches (not canned) will do fine any season.
Ingredients:
2 fresh peaches or 1 package frozen peaches
1/2 cup fresh mixed berries* (blueberries, blackberries, raspberries)
*Note: Frozen berries work very well
1 (6 to 8 ounce) container peach yogurt
2 tablespoons honey
1/4 teaspoon ground cinnamon
Dash of ground nutmeg
1 tablespoon light margarine
1 store bought ready-made graham cracker crust or homemade pie crust
Light whipped cream
Instructions:
Rinse fruit throughly. Slice peaches then place in large bowl. Place the
berries in the same bowl and mix together with sliced peaches. Melt
margarine in a frying pan at low temperature. Once melted spoon fruit
into pan and let simmer. Add the honey, cinnamon, and nutmeg. Stir until
well blended and fruit is soft. After simmering, place fruit into a bowl
and refrigerate until cool. After fruit has cooled mix the yogurt into
the cooled fruit. Spoon mixture into crust. Spread whipped cream over
fruit mixture and sprinkle a dash of cinnamon over whipped cream.
Prep time: 15 minutes.
Makes 6-8 servings.
