ICHIBAN SALAD
1 chicken breast, chopped (optional) 1 cup red cabbage, chopped fine 1 cup green cabbage, chopped fine 4 Tablespoons sesame seeds, toasted 1/2 cup sliced or slivered almonds, toasted 3 green onions, chopped 1 pkg. Ichiban noodle soup (comes in cellophane packaging in soup aisle,will be with soups such as Mr. Noodle, etc. ICHIBAN is the brand name. Best for this recipe as noodles stand up better than any other of the noodle soups. ) *IMPORTANT: Do not substitute a cheaper noodle soup. They go soggy.** Chop cooked chicken breast into small pieces. Chop cabbages and green onions. Add together. Add toasted sesamed seeds and almonds. Crush noodles from soup in pkg and then add to cabbage mixture. DRESSING MIX: Take flavoring from soup pkg and put in cup. Add 1 Tablespoon white sugar, 2 Tablespoons white vinegar, 2 Tablespoons oil, 1/2 teaspoon salt, 1 teaspoon pepper, and the pkg of seasoning. Blend together well. Add to cabbage mixture and stir together. ONLY MIX TOGETHER WHEN READY TO EAT. With the above recipe I usually skip the chicken breast when serving it with a turkey dinner. As there is enough meat with that meal. BUT when I want it as a salad for other times I will add leftover turkey or chicken to it and it is a meal in itself for work etc. Is good without meat too for those who are vegetarians. This is the other salad my mom has served with turkey dinners ever since I can remember. She wouldn't even think of having a family dinner of turkey WITHOUT this salad either. lol TOMORROW'S SALAD 2 eggs 1/4 cup white sugar 1/4 cup vinegar 2/3 cups whipping cream, whipped stiff Over medium heat cook eggs, sugar and vinegar, stirring constantly until thickened. Remove from heat. Cool. Once cooled fold gently into the whipped cream. Then add: 1 cup mini marshmallows 1 cup chopped oranges 1 cup green seedless grapes (cut in half if large) 1 cup crushed and drained pineapple Stir well. Refrigerate.
