Pork Loins and Fried Apples 
   More Than Moonshine: Appalachian Recipes and Collections
  Flour 
  Salt 
  Pepper 
  4 pork loins 
  Bacon drippings or butter for browning 
  3 or 4 tart apples 
  1/2 cup brown sugar 

  Mix flour, salt, and pepper, and dredge each piece of meat in the flour 
mixture. 
  Melt fat in heavy skillet and brown each piece of meat on both sides. 
  Turn heat low. 
  Cut unpeeled apples into quarters and place around the meat. 
  Sprinkle with brown sugar 
  cover, and simmer 45-60 minutes. 
  Serves 4
