CRANBERRY CASSEROLE BREAD Printed from COOKS.COM 2 cups flour ¾ cup sugar 2 tsp. baking powder ½ tsp. baking soda 1 tsp. salt ¼ cup shortening ¾ cup orange juice 1 tbsp. grated orange rind 2 eggs, well beaten 1 cup coarsely chopped cranberries ½ cup chopped glace green cherries Stir flour, sugar, baking powder, baking soda and salt together. Cut in shortening until mixture resembles coarse cornmeal. Combine orange juice and grated rind with eggs. Pour all at once into dry ingredients, mixing just enough to dampen. Dust hopped cranberries and cherries with a tablespoon of flour, then carefully fold into batter. Spoon into a well-greased 1 1/2-quart casserole. Bake in a 350°F oven about 1 hour, or until a toothpick inserted in center comes out clean. Cool 10 minutes. Frost with a confectioners' sugar icing.
