Surf & turf
SERVES 4
INGREDIENTS:

For the patties: For the sauce:
225g/8oz minced beef 25g/1oz plain flour
100g/4oz fresh wholemeal breadcrumbs 150ml/1/4pt dry white wine
4 spring onions (sliced) 50ml/2fl oz vegetable stock
1 garlic clove (crushed) 125ml/4fl oz double cream
1 teaspoon chilli powder 100g/4oz tiger prawns in their shells
2 tablespoons oil
Salt and pepper For the croûtes:
4 slices white bread
25g/1oz butter

. For the patties, mix the minced beef with the breadcrumbs, spring onions,
garlic and chilli powder. Season well and form into four equal rounds.
. Heat the oil in a frying pan and cook the patties for about 7 minutes, 
turning
them frequently. Remove the patties from the frying pan and keep to one 
side.
. For the sauce, add the flour to the frying pan and cook for 1 minute. 
Gradually
pour in the wine, stock and cream, then add the prawns. Cook for 5 more
minutes, stirring all the time.
. For the croûtes, stamp out 4 x 10cm/4in rounds from the sliced bread. Melt 
the
butter in a frying pan and add the bread. Cook for 2 to 3 minutes, turning 
once.
Remove and reserve. Place the patties on the croûtes and spoon the sauce on 
top.
