Hi tonight I made marinated chicken stir fry with spanish rice and homemade flour tortillas, and a green salad it was really good, but my problem is with my rice: It always(well almost always) comes mushy, I thought it was because I put to much water, but please someone correct me if I am wrong, but I use two cups of hot water for every 1 cup of rice. so, I put a little of olive oil in a pan, and let the rice brown a little, then I put a couple of large pieces of onions, for flavor, then I add some garlic powder, and some chicken boullion, then I add the can of tomato sauce. I let it simmer a bit then I put 2 cups of the hottest water from the tap and then cover and let it simmer for about 15-20 minutes, after I put the water in, I lower the flame to a lower flame, (low, med)
