Queen of Hearts Brownies
1 stick butter or margarine 1 1/4 cups sugar 3 large eggs 1 teaspoon vanilla extract 3/4 cup flour 1 cup semisweet chocolate chips ---Peppermint Icing--- 1/3 cup butter or margarine -- 5 tbsp. plus 1 tsp. 1 cup confectioners' sugar 1 cup marshmallow cream 1 tube red glossy decorating gel 1. Heat oven to 325°F. Line an 8 inch square baking pan with foil, letting the ends extend above pan on 2 sides. Lightly grease foil. 2. Brownies: Melt chocolate and butter in 2 quart saucepan over low heat, or in a large bowl in microwave. Remove from heat and whisk in sugar, eggs and vanilla. Stir in flour and chocolate chips until blended. Scrape into prepared pan. 3. Bake 25-30 minutes until tests done. Cool completely on wire rack. 4. Icing: Melt butter in a small saucepan over medium-low heat, or in a medium bowl in the microwave. Add remaining ingredients and beat with mixer on medium speed until smooth. Icing will be slightly runny and that's ok! 5. Spread icing on brownie and immediately squeeze 25 evenly spaced small dots of red decorating gel on the icing. With a toothpick draw a line to make a heart (down center), wiping after each one. Refrigerate until icing sets, at least 2 hours. 6. Lift foil by ends onto a cutting board.
