rich shortbread:

9oz pl flour
3oz caster sugar
6oz best butter

method:

sift flour and sugar into a bowl.rub in butter.knead well to form a smooth 
paste/dough.
divide into 2 portions (or leave whole)
& roll into 2 7" rounds 1" inch thick
(or cut into shapes).
mark rounds with portions needed & prick all over with fork.
bake on greased baking sheets Gas 3-4
for 25-30 mins or till light golden colour.
