Bombay Bazaar Chicken

You can vary the ingredients and amounts to suit what you can afford.

Ingredients:
boneless chicken breast
white or yellow onions
garlic
green and red peppers
carrots
ginger
leeks (optional)
summer squash (optional)
flavorful olive oil (Chris thinks Greek is best)
maple syrup
spices (pick your own)
ginger powder
vanilla yogurt

Method:
1. Chop up vegetables and saute in a wok in olive oil until "al dente."

2. Add boneless chicken breast and ginger powder and saute until chicken is 
near done.

3. Add small container (8 oz.) of yogurt and a tsp. of maple syrup. Simmer 
in wok until yogurt is infused with vegetables and chicken.

4. Serve over rice or pasta
