EGG BACON MUFFINS 
For each serving: 
2 slices bacon 
2 eggs 
2 tablespoons tomato salsa
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Preheat oven to 350.  Fry bacon until about half done then form into 
a ring and place in a well greased muffin pan so that it lines the 
side of the "muffin."  Break eggs into center and top with salsa then 
season with salt and pepper and bake 10 minutes.
