SHOE FLY PIE

INGREDIENTS
1 cup all purpose flour
¾ cup light brown sugar
1/3-cup butter or margarine
½ cup sorghum or dark New Orleans molasses
1-cup water
½ tsp. baking soda
1 tsp. vinegar
1 tsp. cinnamon (optional)
1 tsp. cloves (optional)


DIRECTIONS

Rack 4 or 5 inches above bottom of oven.
Start oven 10 minutes before baking at 450`.
Make pastry, roll out and line a 9" pie pan
from pan tin.  Turn overhang under so fold
is even with pan tin.  Measure flour, sugar,
and butter into mixing bowl and use pastry
blender or 2 knives to cut into a crumb lined
pan.  Combine molasses, water, and soda
thoroughly, then the vinegar.  Pour mixture
onto spoon so as not to disturb crumb lining.
Sprinkle rest of crumbs over top of pie.
Bake for 15 minutes at 450`, reduce to 325`,
bake 25-30 minutes longer or until crust and
top are well brown.  Remove, cool 2-3 hours!!!
