Miniature Shoofly Pies 
 
 
 
1 cup margarine, softened 
6 ounces cream cheese, softened 
2 cups flour  
2 eggs  
1 1/2 cups brown sugar  
2 tablespoons butter, melted 
1/4 teaspoon vanilla  
1 cup sugar  
1 1/2 cups flour  
1/2 cup margarine  
 
In a mixer bowl using an electric mixer on medium speed, cream 1 cup 
softened margarine and 6 ounces softened cream cheese until light and 
fluffy. Add 2 cups flour and mix well.

Shape into 16 balls and press each over the bottom and sides of a 
miniature muffin tin. Combine 2 eggs, 1-1/2 cups brown sugar, 2 
tablespoons melted butter, and 1/4 teaspoon vanilla in a bowl; mix 
well. Spoon into the muffin cups. 

In a bowl, combine 1 cup sugar and 1-1/2 cups flour. Cut in 1/2 cup 
margarine until crumbly. Sprinkle over the tart filling then bake at 
400 degrees for 20 minutes.
