Green Beans

The major health benefit of common beans is their ability to lower cholesterol 
due to 
their rich source of fiber.  Studies have shown that the high fiber contained 
in beans 
prevents blood sugar levels form rising too rapidly after a meal.  This makes 
beans an 
especially good choice for individuals with diabetes, insulin resistance, or 
hypoglycemia.

Mushrooms
Studies have shown that Shiitake and Maitake mushrooms also have extensive 
health 
benefits.  As a result they have become increasingly available.  They provide 
an excellent 
source of selenium, and polysaccharides.  They also  provide an excellent 
source of iron 
and are good sources of fiber, protein, and vitamin C.
