Mexican Deviled Eggs

8 hard-cooked eggs
1/2 cup shredded cheddar cheese
        (fine-shredded is better)
1/4 cup mayonnaise
1/4 cup salsa (not extra chunky)
2 tablespoons sliced green onions
1 teaspoon finely chopped cilantro
        (optional)
1 tablespoon sour cream
Salt to taste

    Slice eggs in half lengthwise.
Remove yolks and set aside whites.
Mash yolks with cheese, mayonnaise,
salsa, onions, cilantro, sour cream and
salt. Fill in the egg whites. Serve or
chill until needed. Makes 16 servings.

If the egg whites break it makes a
great egg salad. You can also garnish
the eggs with some green onion slices
or a sprig of cilantro. This is a great
change to a basic recipe that everyone
loves.---
