MEXICAN FRUITCAKE WITH CREAM CHEESE ICING 2 c. sugar 2 c. plain flour 2 tsp. soda 1 c. chopped nuts 2 eggs 2 oz. can crushed pineapple, drained Preheat oven to 350 degrees. Combine pineapple and soda, add eggs, sugar, flour and nuts. Mix well. Grease and flour (or spray with vegetable spray) 9x13x2 inch pan. Bake at 350 degrees for 30 to 40 minutes. Let cool. ICING: 1 stick butter 2 c. powdered sugar 3 oz. cream cheese 1 tsp. vanilla Beat all together & spread on cake.
