Western Round-Up Sandwich

Ingredients

2  eggs  2
      2 tbsp  diced cooked ham  30 mL
      1 tbsp  diced green pepper  15 mL
      1 tbsp  diced onion  15 mL
      2 tbsp  water  30 mL
      2  slices bread, toasted  2
         Salt and pepper, to taste

Directions

      In small bowl, gently whisk eggs. Add ham, green pepper, onion and 
water. Pour into slightly greased, preheated 8-inch (20 cm) skillet. Cook on 
medium heat until almost set, lifting edges to let uncooked egg run 
underneath. Turn egg over and cook other side.
      Place western between toasted slices of bread. Season with salt and 
pepper.
Variations
Top with hot pepper rings and hot sauce, to taste.
Replace diced cooked ham with two bacon strips, cooked and crumbled.
Use pumpernickel, rye or your favourite bread.
