FOURTH OF JULY FLAG CAKE

3 c. Bisquick baking mix
2/3 c. granulated sugar
2 eggs
1 c. sour cream
1/2 c. cold water
2 tsp. vanilla
1 c. chilled whipping cream
2 tbsp. powdered sugar
1 c. blueberries
3 med. bananas, sliced
1 tbsp. lemon juice
1 pt. strawberries, cut into halves
2 tbsp. apple jelly, melted
Heat oven to 350 degrees. Grease and flour pan, 13 x 9 x 2 inches.
Mix baking mix, granulated sugar, eggs, sour cream, water and vanilla on
low speed; scraping bowl constantly, 30 seconds. Beat on medium speed,
scraping bowl 4 minutes. Pour into pan. Bake until tester comes out
clean, 35 to 40 minutes. Cool.
Beat whipping cream and powdered sugar in chilled bowl until stiff.
Spread on cake. Arrange blueberries, in rows, in upper left corner of
cake. Toss banana slices with lemon juice. Make stripes by altering rows
of strawberries and bananas. Brush apple jelly over fruit. Refrigerate
until serving time.
