BEAT LIKE HELL CAKE
2 eggs
1 c. sugar
1 tsp. vanilla
1/4 tsp. salt
1 c. flour
1 tsp. baking powder
1/2 c. boiling milk
1 tbsp. butter
Beat eggs until thick, add sugar gradually beating constantly. Add
vanilla and salt. Sift flour with baking powder, add to first mixture beating
well. Add boiling milk and butter to mixture, beating thoroughly. Pour into 13
x 9 inch pan lightly greased. Bake in moderate 300 degree oven for 1/2 hour.
FROSTING:
4 1/2 tbsp. (1/8 lb.) stick butter, heat slightly to mix
3/4 c. brown sugar
3 tbsp. canned milk
3/4 c. shredded coconut
Mix all ingredients, spread evenly on warm cake. Brown in broiler 5
minutes.
