Pita Chicken Sandwiches
 
If you're in the mood for something light and yummy that the kids will
like then this is the sandwich for you. 
RECIPE INGREDIENTS:
4 skinless and boneless chicken breasts 1 medium onion, sliced thin 1
tsp. salt 1/2 tsp. pepper 1 tbsp. wine vinegar 1-1/2 tsp. chopped chives
1/2 cup nonfat plain yogurt 1 small cucumber, shredded 4 pitas 
1. In a nonstick frying pan, heat olive oil. Add chicken and cook about
6 minutes. Turn chicken, add onion, and cook about 6 minutes more or
until onion is clear and chicken is tender. Remove from heat. Cut
chicken into thin slices across the grain and place in bowl. Add sauteed
onion; sprinkle with salt and pepper, mixing carefully. Add vinegar and
chives; mix well. In small bowl, mix together yogurt and cucumber. 
2. Split the pitas, making pockets. In each pita, spread 2 tablespoons
yogurt-cucumber sauce. Then place 1/4 of the chicken mixture into the
pocket; close the pockets, wrap in plastic wrap and chill in
refrigerator for at least 2 hours. Repeat for remaining sandwiches. Cut
in half to serve. Makes 8 servings.
