LEMONY LEMON CAKE
1 pkg. (1 lb. 2.5 oz.) yellow or white cake mix
1 pkg. (3 oz.) lemon flavored gelatin
4 eggs
3/4 c. salad oil
3/4 c. water
Blend all ingredients together and beat 4 minutes with mixer. Pour into
greased and floured 13 x 9 inch pan. Bake in a 350 degree oven at 40 to 45
minutes. When cake is done and still warm, prick top in several places with
tines of fork and pour Lemon Glaze over cake. Makes 12 servings.
Lemon Glaze: Blend 1 1/2 cups confectioners' sugar with 1/3 cup lemon
juice and grated rind of 1 lemon. Enjoy.
